Ridiculously Quick Banana Bread Recipe!

Nothing is better than a really quick and simple recipe where you can throw together items you most likely have in your pantry already, AND it gives you plenty to eat now, tomorrow and freeze. LOVE that!

Here's my trust favourite Banana Bread recipe, it's so easy, moist and delicious you'll be saving it to your bookmarks. 

INGREDIENTS

  • 4 large, overripe bananas
  • ½ cup (125ml) coconut oil
  • 3 eggs, lightly beaten
  • 1 cup coconut sugar (can use an alternative if you prefer)
  • 1 tsp vanilla extract
  • 1½ cups (225g) self-raising flour
  • 1 tsp ground cinnamon
  • Shredded coconut (optional topping)

INSTRUCTIONS

  1. Preheat oven to 160°C. Lightly grease a 25cm x 11cm loaf pan and line with baking paper.
  2. Place the bananas in a medium bowl and mash with a fork. Add the oil, eggs, sugar and vanilla and whisk to combine.
  3. Add the flour and cinnamon and mix to combine. Pour into the greased pan and sprinkle with shredded coconut. Bake for 1 hour and 10 minutes, or until a skewer inserted comes out clean.
  4. Allow to cool for 5 minutes, before removing from the pan to cool completely.
